Dairy-Free Gluten-Free Cauliflower Pizza-With 5 Ingredient Crust That Holds Together!


My first gluten-free meal was a pizza (read more about my weight loss journey click here). Over the years, I've tried many recipes and this is hands down my favourite so far.The golden crust can hold your choice of toppings without crumbling and the recipe only requires 5 ingredients. I hope this cauliflower pizza recipe will give your all the more reason to love pizza!

This is not the quickest recipe but every time I make this for my family, no leftovers were ever found in our fridge. Just saying... :)

Cauliflower belongs to the cruciferous vegetable family and it's know for the amazing benefits of:

  • maintaining healthy blood vessels and keeping bad cholesterol in check

  • relieve discomforts caused by inflammation (especially joints)

  • strengthening bone and joint tissues

  • support the natural detoxification of liver (better skin and better energy!)

 

I recommend a minimum of 2 servings of cruciferous veggies per week.

Cauliflower Pizza Dough

make one 9-inch pizza

Prep Time 20 min

Cook Time 30 min

Total Time 50 min

Ingredients

  • Half of a large (6-7 in diameter or approx 1.5 kg) cauliflower florets & stem, ground (yield approx 5 cups)

  • 2 eggs

  • 1/2 cup almond meal

  • 1 cup brown rice flour

  • 1/4 tsp salt

  • 1/4 tsp onion powder*

  • 1/4 tsp garlic powder*

*optional but highly recommended

Recommended Toppings

2 criminal mushrooms

3 green olives, sliced

5 slices of red onions, thinly sliced

1/4 cup marinara

1/3 cup vegan cheese (I like daiya mozzarella)

1/2 avocado, thinly sliced (add after baking)

 

Instructions

  1. Preheat the oven to 400F. Grease a pizza pan with some coconut oil (alternatively, line a baking sheet with parchment paper and grease with coconut oil).

  2. Wash and shake any excess water off of the cauliflower. Break the cauliflower into florets and pulse in a food processor until you get a fine, rice-like texture. Transfer into a large sauce pan.

  3. Cover the cauliflower with water and bring to a boil, cook for about 10 min till the cauliflower-rice is tender.

  4. Strain the cooked cauliflower with a clean dishtowel and squeeze out any last drop of moisture you can get. Transfer into a large mixing bowl.

  5. Add eggs and seasonings to the cauliflower, combine well and shape it into your preferred shape with your hands.

  6. Bake the pizza dough at 400F for 15 min. Remove from the oven and add the sauce and toppings. Your dough should be slightly crusty on the outside and golden brown.

  7. Return the pizza to the oven and cook for another 15-20 min. Until the vegan cheese is melted completely.
